Delicious Vegetable Soup

Ingredients

1 tablespoon butter

4 cloves of garlic chopped

1 small ginger chopped

1 small onion chopped

1 medium size potato chopped

1 medium size carrot chopped

6 beans chopped

1 medium size tomato chopped

1 small pinch turmeric

3 cups of water

Salt as per taste

1 tablespoon fresh coriander leaves chopped

(You can also take cabbage, spinach, celery, broccoli veggies)

Instructions

1. Take a pot and place it over medium heat.

2. Add butter, let it melt. Now add ginger and garlic. Sauté for a minute.

3. Add chopped onion and tomato. Sauté for 2-3 minutes.

4. Now add the chopped potato, carrot, beans and sauté for 4-5 minutes.

5. Add a small pinch of turmeric and salt as per taste to this mixture and stir well for a minute.

6. Add 3 cups of water and bring it to the simmer and leave it for about 20 to 25 minutes.

7. Stir it occasionally and cook until the veggies are fully cooked.

8. When the veggies are fully cooked garnish it with chopped coriander leaves and serve hot.

Yummy Tomato Soup

Ingredients

10 fresh tomatoes

1 medium size onion

3 tablespoons of unsalted butter

2 cup water and salt as per taste.

Instructions

1. Cut the onion into large wedges, peel and crush the tomatoes.

2. Take a pot and place it over medium heat.

3. Melt the butter and add onion take 1-2 minutes.

4. Add tomatoes, water and salt as per taste in the pot.

5. Now bring everything to the simmer and leave it for about 30 minutes.

6. Check and stir it occasionally.

7. Now blend the whole mixture.

8. Bring this mixture to the medium heat and leave it for about 5 minutes only.

9. Serve it hot.

Classic Potato Soup

3 medium size potatoes chopped

½ cup milk

2 cup chicken or vegetable broth

1 tablespoon fresh coriander leaves chopped

Instructions

1. Take a pot and place it over medium heat.

2. Take butter in pot, let it melt and add garlic. Sauté for a minute.

3. Now add chopped onion and potatoes. Sauté for 2 to 3 minutes.

4. Add broth, salt as per taste, stir it and leave it for 10 to 15 minutes.

5. Cook and stir it occasionally until the potatoes are tender.

6. After that take this mixture in a blender, add half a cup of milk and blend until smooth.

7. Return to the pot and heat this mixture thoroughly for 5 to 10 minutes.

8. Garnish it with chopped coriander leaves and serve hot.
